The PS1 hardware didn't have a [https://en.wikipedia.org/wiki/Z-buffering z-buffer].
That means that PS1 games will have jittery textures and warping polygons, which are much more apparent if you increase the internal resolution. The [http://emulation-general.wikia.com/wiki/Recommended_PSX_Plugins#Graphics GTE Accuracy] option can help this, but it can cause other issues as well. Notably holes between polygons.
